The legendary Shiro Kashiba only works behind the counter Tuesdays, Thursdays and Fridays. Still, his legacy is formidable, and the chefs here serve local albacore that literally melts on the tongue, impossibly buttery uni that arrives in its own bristly shell, and salmon that has never looked—or tasted—more beautiful.
